~ Autumn Delights From Joy's Kitchen ~

~ JOY'S SPICY PUMPKIN COOKIE RECIPE~

1    ~ 16oz can prepared pumpkin (Libby's is fine if you can't get some of mine) ;D
1    ~ Cup granulated sugar
1    ~ Egg
1    ~ Cup of shortening 
1    ~ Tsp Vanilla flavoring
2    ~ Cups All - purpose flour
1/4 ~ Tsp salt
1/4 ~ Tsp Nutmeg
3    ~ Tsp Cinnamon

Preheat oven to 350 degrees

Sift dry ingredients into separate bowl and set aside.
Cream sugar and shortening
Add egg - beat until creamy yellow - by hand
Add vanilla flavoring - Stir
Add pumpkin  - Mix well
Gradually add the dry ingredients - Stirring and mixing well after each addition.

Drop by rounded 2 Tsp per cookie onto LIGHTLY greased cookie sheet. 
Bake 10 - 12 minutes - test for done as you would cake - I've experienced different batches of this same recipe taking different amounts of time to bake.

Cookies might only be slightly darker when done.

Frost with Betty Crocker's canned Creamy (not whipped) CREAM CHEESE frosting or one of your homemade favorite cream cheese frosting recipes.

Enjoy with hot Cider or Lipton's Ginger Tea or even a cold glass of Milk!

These delightfully autumn treats do NOT all get frosted - my family will devour them while they're warm if they happen to be home while I'm making them.

These are a soft cookie - not crunchy.
